This year we have been so very blessed with plenty of cucumbers! Which is a very good thing! Last year we planted about the same as this year, but only had enough mainly for canning pickles. I don't really care for pickles, Dan does. Dan don't really care for cucumbers, but I do.
The other day I had 2 of my great nephews here and they kept going to the garden getting cucumbers. I'm talking about 10! Which we enjoyed very much with the home made ranch dressing I made. (hehehehe!) But I did get worried about Dan not having enough for his pickles he was getting ready to make. Well, 2 days later Dan went to check the cucumbers and I was shocked to find the above. He picked over 20 lbs of cucumbers! 2 of them weighed 1lb 11 oz. So, that tells me he will have one more good picking for pickles (this was his 3rd or 4th batch) and the kids and I still have plenty for enjoying! YUM!!!!

Yum! All I can think about now are cucumber slices with salt sprinkled on them. I may have to go shopping today!
I heard that if you have too many cucumbers, you can make cucumber daquiris. ;)

Cucumber daquiris? Leave it to Ami to know about that . . . I'm not a drinker, but I LOVE homemade dill pickles. Yummy!
Wow, that is a lot of cucumbers! I like the lebanese ones the best they are really sweet! The problem around here is when we grow them the kids eat them straight of the vine!
That’s a lotta cukes!!! I love them in salads … and I enjoy pickles too … but I’ve never MADE pickles myself. Could be fun ;--)
