Apple & Celery Salad With Orange Dressing
Ingredients
1 apple with peel, cored and chopped
3 stalks celery, thinly sliced
1 tablespoon chopped almonds
2 tablespoons mayonnaise
2 tablespoons plain yogurt
1 teaspoon grated orange peel
1 tablespoon fresh orange juice
6 cups mixed salad greens
Instructions
Place the apple, celery and almonds in a bowl.
Combine the mayonnaise, yogurt, orange peel and juice. Mix well. Toss with apples.
To serve, place the greens on 4 plates and top each with 1/4 of the dressed salad.
Serving quantity: Serves 4.

Porcupines
INGREDIENTS:
2 pound lean ground beef
1 cup rice
2 cups water
pinch of salt
1 small finely chopped onion
1 teaspoon seasoned salt
1/4 teaspoon garlic powder or 2-3 cloves of fresh garlic finely chopped
1/8 teaspoon pepper
1 large can (15 ounces) dice tomatoes
2 teaspoons Worcestershire sauce
PREPARATION:
Cook the rice with 2 cups of water and pinch of salt. - Let the water come to a boil then turn on low for 20 mins. While rice is cooking mix ground beef , chopped onion, seasoned salt, garlic powder, pepper, and diced tomatoes. When rice is done mix well with ground beef mixture. Shape in 2-3 inch round balls and place in casserole dish. Cook for about 30-45 minutes at 350 degrees (sometimes I cook at 400 degrees)

oooooops! I messed up on my recipe. Here is the correct way.
Peanut Butter Yummies
1 box yellow cake mix
1 stick of butter or margin
1 egg
1 can sweetened condensed milk
1 cup of creamy peanut butter
1 cup (8oz) semi sweet chocolate chips
Mix cake, butter, egg and peanut butter in bowl. Pour 2/3 of mixture into 9X13 baking pan. Melt chocolate chips with condensed milk (you can microwave then, use a boiler or what ever is best for you)When melted pour over cake mixture, then put the rest of cake mixture on top. (if you like you can pour 1/2 then of melted chips, then cake mixture then the rest of the melted chips) Put in pre heated oven of 350 degrees and cook 20-30 minutes. Let cool before you cut into squares.

Easy Chicken Cacciatore
Ingredients:
2 tsp. oil
1 broiler-fryer chicken (3-1/2 lb.), cut up
1 envelope GOOD SEASONS Italian Salad Dressing & Recipe Mix
1 jar (28 oz.) chunky-style spaghetti sauce
1 small green pepper, sliced
6 cups hot cooked Zita pasta
HEAT oil in large skillet on medium heat. Add chicken; cook until browned on all sides, turning occasionally.
SPRINKLE salad dressing mix over chicken. Add spaghetti sauce and green pepper. Bring to boil. Reduce heat to low; cover.
SIMMER 25 to 30 min. or until chicken is cooked through, stirring occasionally. Serve over pasta.
Prep Time: 10 min
Total Time: 50 min
Makes: 6 servings

2 Recipes for the week
Recipe #1 - Chicken Spaghetti
Ingredients: I use 4 leg quarters (you may choose 3 breast) Boiled.
I use 1 box of spiral noodles (you may choose 1 pack of spaghetti noodles)
1 box of Velveeta cheese
1 can of rotel

Boil your chicken, then set aside to cool. Boil noodles in chicken broth. While noodles are cooking cut up cheese in chunks and put on 4 mins in micro wave. After 4 mins pour in rotel and stir. Turn back on 1 1/2 mins. Pour water off noodles, add cheese/rotel and put the lid on to help melt any cheese not completely melted. After you put lid on, DE skin and DE bone chicken. Put it in with noodles & cheese rotel and stir completely.

I like cutting up a small onion and bell pepper and saute them in a little butter and adding it to my rotel chicken. (not everyone likes it this way, so I only do it at home.)

1 cup of mushroom soup
1/2 pint (8oz) sour cream
1 medium onion
1 cup of grated cheese for top
2 cups corn bread crumbled
1 stick of margarine

Mix eggs, mushroom soup, sour cream, onion, melted margarine, corn bread crumb, and squash. Place in casserole dish, put cheese on top and bake. 350 degrees about 45 minutes to an hour. (Until set and brown on top)

3 packages (8 oz each) cream cheese, softened
3/4 cup sugar
3 eggs
1 teaspoon vanilla extract
2 cups (12 oz package) Hershey's mini chips-semi-sweet chocolate, divided
1 extra- serving- size packaged graham cracker crumb crust (9 oz)
2 tablespoons whipping cream
prep time: 15 minutes
bake time: 40 minutes
(1) Heat oven to 450 degrees
(2) Beat cream cheese and sugar in a large bowl with mixer until well blended. Add eggs and vanilla; beat well. Stir in 1 2/3 cups small chocolate chips; pour into crust.
(3) Bake 10 minutes. Without opening oven door, reduce temperature to 250 degrees; continue baking 30 minutes or just until set. Remove from oven to wire rack. Cool completely. Cover; refrigerate until thoroughly chilled.
(4) Place remaining 1/3 cup chips and whipping cream in small bowl. Microwave at High for 20 - 30 seconds or just until chips are melted and mixture is smooth when stirred. Cool slightly; spread over top of cheese pie. Refrigerate 15 minutes or until topping set.

recipe for the week
Stuffed Bell Peppers
Ingredients:
1 pk hamburger meat (4-5 lbs)
2 medium onions
2 cups of uncooked rice
2 cans diced tomatoes (14.5 oz)
6-7 large bell peppers
Prep:
1st pan- dice up onions, put hb meat in and scramble till meat is brown, then drain. Add 2 cans of tomatoes. (salt and pepper to taste)
2nd pan- add 2 cups of rice with 4 cups of water. 1/2 stick of butter and 3 dashes of salt. Bring to a boil, then turn on low, cook 20 more mins.
Mix- Add the Hb and rice mix together. (you may or may not need all of the rice)
Wash the bell peppers, cut the top off, then carefully take a knife and cut out the inside.
Cook: Place bell peppers in casserole dish (this will help them stand up) Stuff the bell peppers with the mix and cook about 30 - 45 minutes @ 350 degrees. (cover with aluminum foil and put a little water in bottom of pan for steam)

You will have extra stuffing left. With the remainder, you can stuff more peppers or do like I do. I put it a freezer zip lock back for later and use it for something else. (Usually soup)I also add the left over rice with the stuffing.

After taters and hamburger meat is cooked layer ingredients into a casserole dish....
1st layer- taters
2nd- Hamburger meat
3rd- Pork n beans
Put in oven and cook @ 350 degrees for about 20mins or completely warmed all the way through.

Recipe for Chow Chow
Ingredients needed:
1- cabbage (shredded)
4- cucumber (chopped)
4- red tomatoes (chopped)
4- green tomatoes (chopped)
2-3 bell peppers (chopped)
5-6 hot peppers (chopped)you can add more if like.
2 - onions (chopped)
3 cups of sugar
3 pints of white vinegar
Salt and pepper to taste
Put about 3 table spoons of all spice in a new sock, tie it off and throw it pot.(Throw sock away or empty it and wash it for another batch.)
Mix all in one big pot, bring to a good boil, then turn down on medium and put the lid on it. Cook about 20 - 30 minutes or until tender. Don't over cook 'cause you will cook all the liquid out.
Then put in canning jars. Put enough liquid to bottom ring. Wait 20 30 minutes and make sure jars seal.
Most people eat chow chow with peas, greens, or just about anything. I like to heat mine up and eat with corn bread.
If jars seal good it will last about a year. Refrigerate after open.
Try it you might just like it!
